Happy Friday! Here in the US, we’re gearing up for the long Labor Day weekend, saying goodbye to summer with picnics, potlucks, and cookouts. I’ve been making the rounds of some of my favorite cooking blogs looking for some good portable foods to take to a Labor Day gathering, and thought I’d share some of the recipes I’m thinking would be perfect for an end-of-summer weekend gathering.
If you’re looking to keep things healthy, a salad is the obvious choice, but it doesn’t have to be boring. A few recipes that caught my eye are these summer squash and sunflower sprout salads (both from Elana’s Pantry), or this grilled eggplant salad from the Wednesday Chef.
Want something savory but more substantial? I’m in love with the idea of a tomato galette with a quinoa flour crust from Canelle et Vanille. So perfectly summer, especially if you are looking for a good way to say good-bye to all those heirloom tomatoes that are about to disappear from the garden or market.
Finally, maybe you want to just cut straight to the chase and bring a dessert. For something really decadent, I’m loving the look of this chocolate coconut cream pie from Heather Eats Almond Butter. Or for something a bit more season specific, these beautiful rhubarb and strawberry tartlets (again from Cannelle et Vanille!) are making me want to run out and get a fluted tartlet pan, stat. They’re also making me reminiscent of my dad’s rhubarb crumble and reminding me that long weekends are also a great time to catch up on things that can get lost in the bustle of everyday life, like calling your loved ones. Adding “Call Dad” to my list of weekend activities!
